Brisket smoked with bacon over pecan chips

This lil brisket weighed just over 5lbs if I remember correctly. It was one of the first briskets I smoked. It didnt have much of a fat cap so I decided I would try something different to keep it moist.


I layered maple bacon over the top so that when it smoked, the fat dripping from the bacon would not only keep the meat moist during smokin but impart some delicious flavor.


Here's a shot of the set up. Pecan wood chips are flaming up!


Almost finished. I forgot to take more pics after this but it was delicious!
